Kalua Pig Quesadilla
  1. Lay a Sinaloa Tortillas on a clean work surface.
  2. Distribute 2 oz of the mixed cheeses and 2 oz of Kalua Pig evenly over tortilla.
  3. Sprinkle the chopped green onions on top of the Kalua Pig and cheeses.
  4. Place another Sinaloa tortillas on top of mixture.
  5. Take "quesadilla' and place onto hot griddle and allow to grill until golden, about three minutes.
  6. Using a spatula, carefully flip over to finish grilling the other side until golden cheese is melted. Remove from pan and place on cutting board. Cut into four wedges.
  7. Place the quesadilla on a plate and serve with your favorite salsa.
